What “Days to Maturity” Means

• For transplants (tomatoes, peppers, eggplant) — counted from the date seedlings are transplanted outdoors
• For direct-sown crops (beans, carrots, radishes) — counted from the date seeds are sown in the ground
• For perennial fruits (strawberries, blueberries) — counted from planting of established plants in their first productive season

Factors That Affect Harvest Timing

• Temperature — warm weather accelerates growth; cool weather slows it
• Sunlight — most vegetables need 6–8 hours of direct sun daily
• Soil quality — well-amended, fertile soil produces faster growth
• Watering — consistent moisture is critical during fruit development
• Variety — early, mid, and late varieties have different maturity ranges

• Actual harvest dates vary based on local conditions and specific cultivar
• Extreme weather (heat waves, cold snaps, drought) can shift harvest significantly
